The mille-feuille – english

I love the look of a well-piped cream, the smooth texture of a mousse, the perfect balance between a not-too-sweet dessert and the dough around it. When it’s all beautifully layered in a special Napoleon with its cream and crunchiness, the right flavors and textures .. that could easily be my favorite dessert! When I was asked to cook this dessert, the instruction was for “something nutty, chocolatey … something classic, but new, you know? And please, make it look modern”.
Yeah, being a Private Chef is no easy task: I have to develop an exclusive menu following the guest’s description while being as loyal as possible to their idea of a perfect meal. But I love the challenge! I came up with a mille-feuille with nougat mousse, puff pastry, salted caramel sauce and vanilla ice cream. It got a100% approval rate!
